Scallops with Oyster Mushrooms
1/2 lb. fresh oyster mushrooms, sliced
1-1/2 lbs. bay scallops
2-3 cloves garlic (crushed or minced)
1/4 cup butter
1/4 cup green pepper, chopped
3 tbsp. unsifted all-purpose flour
1-1/2 cups milk
2 tsp. salt
dash of pepper
dash of cayenne
1/4 cup sherry or wine
Wash scallops in cold water; drain. Heat large skillet. Cook scallops in butter (2-3 tsp.) or olive oil and garlic for about 2-3 minutes over medium heat. Set aside. In the same skillet, heat butter and add mushrooms and green pepper. Cook for 5 minutes, stirring occasionally. Remove from heat and blend in flour; then add milk, salt, pepper, and cayenne. Bring to a boil, stirring. Add sherry or wine and scallops, reheating gently. Serve hot over pasta or wild rice with vegetables on the side.
Oyster Mushroom Omelet
1/2 cup cashews
1/2 small onion, chopped
2 cloves garlic, crushed or chopped
8 eggs
1/2 lb. fresh oyster mushrooms
1 cup cheddar cheese, grated
2 tbsp. Tamari (Bragg's or soy sauce)
1/4 cup water
2 tbsp. canola oil
salt and pepper to taste
Mix the eggs and water in a large bowl and beat well. Saute the mushrooms in a frying pan with oil over medium heat until dry. Add onions and garlic. Cook for one minute, then add cashews. In medium-sized skillet, put a thin coat of oil or butter, add egg mixture, and cover for one minute. Add a layer of cheese. Pour mixture that includes mushrooms, onions, garlic, etc. over the layer of cheese. Fold over and cook for 2-3 minutes.
Broiled Mahi-Mahi in Oyster Mushroom Ginger Sauce
6 oz. filet of Mahi-Mahi (or any fish you like)
1/4 lb. fresh oyster mushrooms, thinly sliced
1 oz. white wine
1 oz. sweet butter (unsalted)
1/2 oz. ginger olive or canola oil
Brush the filet of fish with oil and broil (or bake at 450 degrees) for 7-10 minutes. After removing fish from broiling pan, place the pan on the stove burner at high heat and deglaze the pan with white wine. When wine has been reduced by two-thirds, add mushrooms and ginger. Saute for about one minute, add butter, and swirl ingredients together until butter forms a smooth texture (about 15-20 seconds). Remove immediately and pour over fish. Serve with vegetables and pasta or wild rice.
