OYSTER MUSHROOMS


Known as Hiratake in Japan, the many delicious varieties of oyster mushrooms (Pleurotus ostreatus) are found growing on deciduous trees throughout the world, particularly North America, Europe, and Asia. Praised as "the mushrooms of flower heaven" in a poem written during the Sung dynasty (A.D. 420-479) (Wang, 1985), they get their name from the oyster-like clusters of semi-circular caps. The oyster grows in a variety of colors: white, blue, gray, tan, brown, yellow, and pink. These mushrooms are cultivated for food in many parts of the world--almost 170,000 metric tons were marketed in 1986, and the industry had grown to 909,000 tons by 1991.
